Carrot, Sweet Potato, & Pumpkin Muffins {Sneaky, sneaky....}













As the mother of a VERY picky toddler I’m trying very hard to be inventive with recipes. My little munchkin loves carbs and sweets. Wonderful.

I figured if I could find a couple recipes with carbs and sweets, and then sneak some veggies in there then I'd find some success. ;) It’s not ideal, but hey….at least Mason is getting some veggies in his diet.

This past weekend I made Pumpkin, Sweet Potato, and Carrot Muffins. They are low in sugar and they are actually really good. I’ve been eating them for breakfast every morning.
  
Carrot, Sweet Potato, & Pumpkin Muffins

1 Teaspoon baking powder
1 Cup Plain Flour
1/2 Cup Brown Sugar
1/3 Cup Sweet Potato
1/3 Cup Carrot
1/2 Cup Pumpkin
2 Eggs (lightly beaten)
1T Vegetable Oil

Stir the flour and baking powder into a bowl.

Combine your veggies into one bowl & puree them so they're nice and soft.

Add sugar, eggs, veggies, and oil and combine well.

Spoon mixture into a greased mini muffin (or large if you prefer) pan and bake for 15-20 minutes at 350 degrees.

Let cool for 10 minutes before taking them out of the tin and enjoy!

Next up….Broccoli Zucchini & Chocolate Muffins. Sneaky Sneaky….

  1. This is one I haven't tried! Does he like marinara sauce? I puree spinach and carrots into mine and the boys never know!! I have made the zucchini muffins too, but not with broccoli!! I am curious to hear how those go!
