Monday, Monday

It’s just another manic Monday…whoa.

Life has been extra busy lately. It’s not exactly how I’d like things to be, but alas it’s my own fault. However, the craziness has given me more appreciation for the time I do get when it’s just me, my hubby, and my munchkin.

Monday this week was one of those Mondays that you are beyond thankful for 5pm.  I could’ve gone home exhausted and began my normal weeknight duties, but instead I wanted to just go home and do something fun with my boys.

So, we hopped on our bikes and went for a bike ride to the park and spent the evening sliding down slides, swinging, and spinning on a merry go ground. It was the perfect ending to an overwhelming day; an evening I’ll never forget. :)

I’m so thankful for moments in my life like that; moments that wash away the hardest of days.

As I faced Tuesday it didn’t start out so well, but after the chaos the morning brought I decided to spend some time on my lunch to redirect all the stress I feel and just call on the Lord for the rest I find in Him and the joy He has for me.

One of my favorite songs right now is “Closer” sung by Steffany Frizzell and I just sing it over and over and over.

One of the most incredible things about a relationship with Christ is the ability to come to Him whenever, however, with no set format to being at His feet. He’s pretty great like that.

I pray that even in the chaos of life, that you find rest and joy in the Lord. Sometimes we have to slow down to rest at His feet, but when we do it’s pretty amazing the refreshing He provides us when we need it.

Brody’s Journey

April is National Autism Awareness Month and to highlight the growing need for concern and awareness about Autism the United States recognizes April as a special opportunity for everyone to educate the public about Autism and the issues within the Autism community.

Autism is a disorder of neural development characterized by impaired social interaction and communication, and by restricted and repetitive behavior. The diagnostic criteria require that symptoms become apparent before a child is three years old. Autism affects information processing in the brain by altering how nerve cells and their synapses connect and organize; how this occurs is not well understood. 

In honor of National Autism Awareness Month I wanted to spotlight one of the cutest little boys my eyes have ever laid eyes on. My beautiful friend Angelita recently found out her son has Autism.  Following her strength, courage, and determination for her son’s journey has been incredibly inspiring. She is a mother to look up to and mother to find strength in.

Brody is such a cutie patootie and I’m so excited to share these big eyes with all of you. To follow Brody's Journey you can like his Facebook page which in is connection with the Autism Speaks Facebook page.

One of the great things about this month is not only being educated on the concerns of Autism, but being able to get involved and helping. Continued research on Autism is key in understanding how it works, with the hopes of finding ways to make life better for those 1 in 88 who are diagnosed with Autism.

Because of those who have previously supported Autism research there are 10 things we know today that we did not know a year ago. Read about those 10 things here.

Every little bit helps. So spread the word and get involved. How can you not look into those big eyes and not want to do your part to help? {I just want to kiss those cheeks…. isn't he just the cutest!?!}

Carrot, Sweet Potato, & Pumpkin Muffins {Sneaky, sneaky....}

As the mother of a VERY picky toddler I’m trying very hard to be inventive with recipes. My little munchkin loves carbs and sweets. Wonderful.

I figured if I could find a couple recipes with carbs and sweets, and then sneak some veggies in there then I'd find some success. ;) It’s not ideal, but hey….at least Mason is getting some veggies in his diet.

This past weekend I made Pumpkin, Sweet Potato, and Carrot Muffins. They are low in sugar and they are actually really good. I’ve been eating them for breakfast every morning.
Carrot, Sweet Potato, & Pumpkin Muffins

1 Teaspoon baking powder
1 Cup Plain Flour
1/2 Cup Brown Sugar
1/3 Cup Sweet Potato
1/3 Cup Carrot
1/2 Cup Pumpkin
2 Eggs (lightly beaten)
1T Vegetable Oil

Stir the flour and baking powder into a bowl.

Combine your veggies into one bowl & puree them so they're nice and soft.

Add sugar, eggs, veggies, and oil and combine well.

Spoon mixture into a greased mini muffin (or large if you prefer) pan and bake for 15-20 minutes at 350 degrees.

Let cool for 10 minutes before taking them out of the tin and enjoy!

Today I have the honor to showcase my beautiful neighbor and friend, her amazing talent, and the business she owns; Jessica from Jessica Lynn Photography!

I met Jessica about a year ago when we became neighbors. She and her beautiful family were one of few that introduced themselves to the newbies in the neighborhood and it wasn’t long before Mason fell for one of her little girls. ;)

Jessica is a wife, mother, sister, daughter, and friend.  She was born and raised outside of Philadelphia.

Photography is her passion.  She believes that special moments in life need to be captured, and the opportunity is priceless.  From engagements to weddings, maternity to birth to baby, children to seniors... she does it all.  She believes that everyone deserves a good photographed memory, and therefore she tries to keep her prices reasonable and her packages full of unique surprises.

She is an on-location, natural light photographer.  She does studio set up for newborns and children, and can either come to your home or you can come to hers.

Jessica has captured some of the most memorable moments in our lives over the last year. The header picture of my family at the top of my webpage was taken by her.

I’m blessed to call her friend and neighbor; and thankful for the talent she has in capturing some of our life’s unforgettable moments.

This year was extra fun with Mason. As he gets older he has more excitement over the little things and it just warms my heart to see how much he enjoys life. I pray that he always feel that way.

We started Easter morning by heading to church, then went to my in laws for a yummy Easter lunch, and then decided to go outside and enjoy the beautiful weather we finally had. It’s been cold and snowy for months, so any little bit of warmth and sunshine, and we are outside soaking it up.

Easter continued on with some fun adventures of riding around on a 4 wheeler, swinging, going down the slide, and hunting for eggs left by EB (Easter Bunny) that were filled with candy. Then of course the basket that EB left for Mason was the topper.

We had a great Easter and I pray each of you enjoyed Easter with your families as well!

Mason got to decorate Easter Eggs for the first time this year and he was so stinking cute! I will admit; decorating Easter Eggs is not on my list of enjoyable things. It’s messy and eggs gross me out a tad. Plus, they are stinky!

All the silliness aside though we had a good time. :)

I baked the eggs in the oven for 30 minutes at 325 degrees. Then I immediately put them in an ice bath when they were done. This is supposed to be a good way to make easy peeling. However, we had to toss the eggs on Easter because I forgot to put them in the fridge after we were done. Opps!

For decorating I had gotten a Spiderman decorating kit since Spiderman is Mason’s favorite right now. It came with stickers, dye tablets, the egg stands, and some fun egg wraps that I couldn't figure out. Somehow I didn't get the dye to work out well either so we only had green, blue, and yellow eggs. Thankfully Mason didn't seem to notice and was happy with what did work out.

I’m thankful for these little adventures with my munchkin! Hope you guys had fun decorating eggs this year too!
