In my constant quest to find quick and easy recipes I tried 2 new yummy
things this week. So, you lucky readers get 2 recipes today; that’s how simple
they are.
The first one {Garlic Brown Sugar Chicken} I made for dinner and
although I love garlic and the smell of sautéed garlic; I can’t stand the
forever lingering scent it leaves in my home.
{The price you pay for such deliciousness.}
Preparation was simple and quick. Preheat your oven while you sauté
your garlic. By the time you’re down sautéing and adding the brown sugar, your oven
will be ready.
{A time saving quick trick: I
wanted to cut back on as much time as I could because I had a hungry hubby to
feed. So, I put the chicken in the baking dish and put it in the oven while it
preheated. It cooked the chicken a little bit before I added the brown sugar
mix.}
Garlic
Brown Sugar Chicken
Ingredients
4 boneless skinless chicken breasts
4 garlic cloves, minced
4 tablespoons brown sugar
4 garlic cloves, minced
4 tablespoons brown sugar
Directions
Preheat oven to 500°F and lightly grease a casserole dish.
In small sauté pan, sauté garlic with the oil until
tender.
Remove from heat and stir in brown sugar.
Place chicken breasts in a prepared baking dish and cover
with the garlic and brown sugar mixture.
Add salt and pepper to taste.
Bake uncovered for 15-30 minutes.
The second recipe I made for a snack. It would make a good appetizer,
but I made it then refrigerated the leftovers and eating it cold is just as yummy
as warm.
{A time saving quick trick: Instead
of baking it I put everything in a microwavable dish and threw it in the
microwave until the cream cheese was melted enough to mix.}
Rotel
Corn Dip
Ingredients
3 (15 1/4 oz) cans of corn, drained
1 (8oz) packed of
cream cheese, cubed
1 (10oz) can of
Rotel tomatoes & chilies
Directions
Preheat oven to 350°F
Place all ingredients into a medium casserole dish.
Put in the oven for 10 minutes; remove and stir ingredients
until mixed well.
Place back in the oven and bake for another 20-25 minutes.
