A Healthier Twist to No Bake Cookies
I will be the first to admit that I have a sweet tooth problem and then
I wonder why my oldest always wants sweets. ;)
Over the weekend I decided to whip up a batch of one of my favorite
cookies; the delicious No Bake Cookie. Mmmm….
In my attempt to get everything out and ready to make them I realized I
didn't have any butter and typically the recipe calls for a stick of butter. I
was determined to enjoy a No Bake Cookie before the night was over so I had to
improvise.
Lately I've been trying to do incorporate some healthier options in my
cooking and I've been using coconut oil a lot and decided to use that in place
of the butter. There are several benefits to using coconut oil in many
different applications.
The cookies turned out fantastic and when I offered my picky toddler
one, I was positive he’d turn me down, but since it looked like chocolate he
tried it out and to my surprise he really liked it. He said “ooo….yummy mama! I
like it!” I then went to the other room to grab some laundry and I heard him
singing in Yo Gabba Gabba fashion “So yummy, so yummy! There’s party in my
tummy! So yummy, so yummy!”
Thank you coconut oil for saving the day because we wouldn't want to
miss the party in my little boy’s tummy! ;)

INGREDIENTS:
2 Cups granulated sugar
1/2 Cup coconut oil
1/2 Cup Low-Fat Milk
1/3 Cup baking cocoa
1 Cup peanut butter
1 Cup peanut butter
3 Cups Oats (quick or old fashioned, uncooked)
PREPARATION:
In large saucepan,
combine sugar, coconut oil, milk, and cocoa. Bring to boil over medium heat,
stirring frequently. Continue boiling 3 minutes, stirring frequently. Remove
from heat. Stir in peanut butter and oats.
Drop spoonfuls onto
waxed paper. Let stand until firm. Store tightly covered.
